An interesting advantage: thanks to the special grid that protects the bowl, you can add the ingredients one after the other while the machine is running, keeping the dough under control at all times.
One dough in five steps
- Pour 50% of the flour into the mixer.
- Add the yeast already dissolved in a little water (5%) at approximately 38 °C.
- Pour in the remaining 95% of water at a temperature of 10-15 °C, if the room temperature is around 20 °C (with higher room temperatures, reduce by 3-4 °C).
- After 3-4 minutes of mixing, add the salt, 50% of the remaining flour and the extra virgin olive oil.
- Remove the dough from the bowl and place it on a work surface, covering it with a wet cloth. The temperature of the dough must not exceed 24 °C.
